Meghan Markle has agreed to share one of her most popular recipes with Spanish chef José Andrés. Penguin Random House, the same publisher responsible for Prince Harry’s biography, announced that the recipe would appear in “The World Central Kitchen Cookbook: Feeding Humanity, Feeding Hope”.
All proceeds from sales of the book will go to the nonprofit organization that feeds communities affected by natural disasters and humanitarian crises, so says a statement on Meghan and Prince Harry’s Archewell Foundation website.
“Meghan, the Duchess of Sussex, is proud to have contributed a recipe.”
Meghan Markle lemon olive oil cake
This lemon olive oil cake is famous as the duchess made it in 2021 to share with a group of restaurateurs in Chicago who partnered with World Central Kitchen to feed those in need during the pandemic.
This is not the first time Meghan has demonstrated her talent for cooking and recipes. In 2018 she wrote the foreword for the 50-recipe collection for “Together: Our Community Cookbook” written by a group of women who suffered from the Grenfell Tower tragedy.
During the Duke and Duchess of Sussex’s tour of Australia, Meghan made homemade banana bread with chocolate chips and ginger and shared it with a family in Dubbo, near Sydney.
How to make Meghan Markle’s olive oil and lemon cake
Ingredients for Meghan’s Lemon Cake Recipe:
- 3/4 cup extra-virgin olive oil.
- 2 lemons.
- 1 3/4 cups flour.
- 1 1/2 teaspoons baking powder.
- 1/2 teaspoon salt.
- 3 large eggs.
- 1 1/4 cups sugar.
- 1 teaspoon vanilla extract.
- 3/4 cup whole milk
Instructions for Meghan’s Lemon Cake Recipe:
- Preheat oven to 350°F (180°C). Line a 9-inch (22 cm) cake pan with parchment paper and spray with cooking spray.
- Zest the lemons and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the eggs and sugar together until pale and fluffy, about 3 minutes.
- Add the vanilla extract, milk, olive oil, and lemon zest and beat until combined.
- Add the flour mixture in three parts, beating on low speed until just incorporated after each addition.
- Pour the batter into the prepared pan and bake for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in the pan for about 15 minutes before removing the cake and letting it cool completely on a wire rack.
- Serve adorned with lemon slices and dusted with powdered sugar if desired.
